Directions
- Prepare Chicken: Prepare chicken tenders by removing the tendon. Put all the tenders into a large bowl and cover with milk, vinegar, salt, and black pepper. Stir to combine and let soak for 20-30 minutes. Meanwhile, put panko bread crumbs into a gallon size bag. After the tenders have finished soaking, shake off excess milk and put each tender into the bag of bread crumbs. Shake and move the tenders around until each is coated in crumbs. Remove the tenders from the bag and place them on a sheet pan to prepare to fry. Discard any remaining bread crumbs.
- Mix Butter: Using a small bowl, combine butter, thyme, pecans, and salt.
- Mix Waffle Batter: Using a medium bowl, mix flour, baking powder, sugar, and salt. In a separate, large bowl, mix eggs, milk, and melted butter until combined. Pour flour mixture into liquids and whisk to combine, smoothing out any lumps you see.
- Fry Chicken and Cook Waffles: To ensure the waffles and chicken are both fresh and tasty, cook the waffles and fry the chicken simultaneously. Preheat the waffle iron. Pour the quart of oil into the bottom of a frying pan or cast-iron skillet. Heat the oil to about 350° before adding in the chicken. Fry the chicken in small batches for 3-4 minutes per side, flipping once it has developed a golden-brown crust. Remove each piece when it reaches an internal temperature of 165°. While you are frying the chicken, pour the waffle batter into waffle maker and cook according to your machine’s instructions. Continue until all the chicken has been fried and the waffle mix is gone.
- Serve: Plate a waffle onto each plate with a side of chicken and maple syrup. Top with pecan butter and dig in!
Meal Prep Tip:
This recipe keeps well until the next day. The waffle tends to dry out when reheated in the microwave but you can also try reheating it in a toaster or toaster oven. Re-fry the chicken or heat in the microwave on low power to avoid drying it out or making it soggy.
