Easy Garlic Pasta

      1. Prepare Ingredients:  Fill a large pot with water and place it on the stove and bring it to a boil (for noodles in step 3; Note: Do not cook pasta until after you complete step 2). Cut bacon into small pieces.  Mince garlic and shallot. Chop parsley.  Grate parmesan.
      2. Cook Bacon and Aromatics:  In a frying pan, add the bacon pieces and turn on the stove to medium-low.  Cooking the bacon on a lower temperature allows the fat to render which helps create a more flavorful pasta.  Cook the bacon for 8-10 minutes until the fat has rendered and the bacon pieces are crispy.  Add in garlic and shallot and cook for 1-2 minutes until everything is very fragrant.  Remove the pan from the heat and dump everything into the largest bowl you have as you will be using it to mix everything together at the end.
      3. Cook Pasta:  Cook the pasta in the boiling water according to package instructions.
      4. Finish Pasta:  Once the pasta has finished cooking, drain and reserve about 1/2 cup of the cooking liquid.  Immediately put the hot pasta into the bowl with the bacon and garlic mixture.  Crack the two eggs into the pasta and add in the parmesan and parsley. Stir thoroughly using a large spoon or a set of tongs.  As you stir, the egg coats the noodles creating a creamy sauce. Don’t be worried about raw eggs in this case, by mixing the egg into the noodles just after the noodles finish cooking, the noodles have enough heat to fully cook the egg.
      5. Serve:  Once everything is mixed, you can add as much of the reserved water from the pasta as desired to create a thinner sauce although if you like it thicker, this is not necessary.  Serve the pasta by putting a portion of the pasta in a plate or bowl and topping with additional parmesan and/or parsley as desired.

      Meal Prep Tip:

      This pasta stores well in the refrigerator for up to 5 days. When reheating, if the pasta seems dry, add a tablespoon or two of water and stir it in.  This will help refresh the pasta and bring back the creamy flavor of the eggs and cheese.
