Method
Prepare the Ingredients: Chop the onion into small dice. Mince the garlic. Cook the noodles according to package directions. Cook the chicken or broccoli as desired if using.
Make the Sauce: In a large saucepan, heat the butter until melted and bubbly over medium-high heat. Add the onions and garlic and cook while stirring until the onions are soft. Add the flour and cook and stir for 45-60 seconds until the flour and butter have completely mixed together and are bubbly. Add in the milk slowly while stirring with a whisk to avoid lumps. Add the cream, Italian seasoning, and nutmeg and bring to a simmer over medium-low heat. Simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened. Remove the sauce from the heat and add the parmesan plus salt and pepper to taste. The sauce should be thick, creamy, and have flavors of garlic and parmesan cheese.
Serve: To serve, mix a portion of noodles, sauce, and if using broccoli/chicken breast together. Top with additional parmesan and Italian season as desired. This pasta is delicious with some breadsticks or garlic toast.
Meal Prep Tip: This dish can be stored in the fridge for 4-5 days and can also be frozen. To store in the fridge, store the sauce and noodles separately and mix together just before heating. To freeze, store the sauce in a large freezer bag and, if using, store the chicken/broccoli in another freezer bag. Remove the sauce and broccoli/chicken from the freezer and let thaw for 1 hour. Then reheat in the microwave or over the stove and cook the noodles according to the package directions.
