Method
Prepare Ingredients: Place ground beef in a large bowl. Dice onion and carrots. Mince garlic. Chop spinach into small pieces. Preheat oven to 400°.
Cook Vegetables: Heat a pan with a small amount of oil. Add onions and carrots and saute until the onion becomes translucent. Add garlic and spinach and cook 1-2 minutes more until spinach has wilted. Remove pan from heat and let cool slightly.
Mix Ingredients: Add vegetables to bowl with ground beef. Add worcestershire sauce, italian seasoning, oats (if using, see note) and eggs. Mix well and form the mixture into a loaf shape on a sheet pan.
Sauce: Mix together ketchup and worcestershire sauce and spread over loaf.
Bake: Place the loaf in the oven and bake a 400° for 30-40 minutes until internal temperature reaches 165°. Remove from oven and let meatloaf cool for 5 minutes.
Serve: Slice loaf into 1/2 inch slices and serve with sides of mashed potatoes and mixed roasted vegetables.
