California Roll

This classic sushi roll is offered at just about any Japanese restaurant and can help satisfy that craving for sushi without breaking the bank! At just $2.45 per serving and $9.80 for the whole recipe it is an excellent idea for a date night or a night with the family. Save money while having fun together!

      1. Prepare Rice:  Put jasmine rice* and water into a pot or pressure cooker/rice cooker and cook according to package directions.  Once rice is fully cooked, fluff with a fork and stir in rice vinegar, sugar and salt.  Cover with a towel or lid to keep moist while allowing to cool to room temperature.
      2. Prepare Ingredients:  Cut imitation crab meat into long thin strips.  Peel avocados and cut into long thin strips.  Peel the cucumber and remove the seeds then cut into long thin strips.
      3. Assemble Rolls:  Lay nori out onto a sushi mat or kitchen towel that is covered in a piece of plastic wrap.  Spread about 3/4-1 cup of cooked rice onto the nori to cover the entire sheet.  Layer a row of avocado, cucumber and crab onto the rice and then roll everything into a tight roll.
      4. Mix Sauce:  Mix together mayonnaise, soy sauce and sriracha sauce in a small bowl.
      5. Serve:  Slice sushi roll into 1/2 inch pieces and drizzle sriracha mixture over the roll.  As an additional (optional) garnish you can sprinkle some toasted sesame seeds over the top.  Serve immediately with a side of soy sauce and enjoy!

      Meal Prep Tip:

      These rolls are one of the few meals on the website that do not store well for longer than a couple of hours.  You should eat these rolls immediately after making them.  If you do want to prepare them ahead of time, the best option is to prepare all the ingredients and then assemble them just before eating.

      *Note: Typically short grained white rice that is labeled “sushi rice” is the best option for sushi.  Jasmine rice is used in this recipe as it is typically a much cheaper alternative than expensive sushi rice options and is still delicious when prepared well.
